Basil Pesto Chicken over Angel Hair Pasta

Last night I had a friend over for dinner - a rarity for me, and decided  make this recipe that I'd been meaning to try and was just looking for a good excuse. I liked all of it's ingredients, though I don't eat chicken often (I am "mostly vegetarian"). Best of all, the recipe seemed pretty simple, and not too time consuming.





Basil Pesto Chicken over Angel Hair Pasta
Original Recipe Yield 4 servings
Ingredients:
  •  1 (8 ounce) package  whole wheat angel hair pasta
  •  2 teaspoons olive oil ( I ended up using about twice that)
  •  1/2 cup finely chopped onion (I used a Vidalia onion)
  •  1 clove garlic, chopped
  •  2 1/2 cups chopped Roma tomatoes
  •  2 cups boneless chicken breast halves, cooked and cubed 
  •  3 tablespoons of basil pesto  - See My Recipe for Pesto
  •  1/4 cup chopped fresh basil
  • 1/2 teaspoon salt 
  • 1/4 cup Parmesan cheese
Directions:
In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 5 to 8 minutes.
Drain, and set aside.
In a large skillet, heat oil over medium-high heat. Stir in garlic and onions to saute.Add tomatoes,chicken, basil, pesto, salt and pepper. Reduce heat to medium, and cover skillet.
Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
Toss sauce with hot cooked angel hair pasta. Serve with Parmesan cheese.

I made this recipe for 2 and was happy to have some leftovers. I had cooked the pasta and cooked and cubed the chicken when my friend arrived with fresh basil and oregano from his garden as I was sauteing the onions and garlic. I am fortunate that he likes to cook even more so than I (and it doesn't hurt that he's also adorable). He took over from that point, with no arguments from me. He chopped and added the basil and oregano. Oregano is not in the recipe, but we figured it could only be an added bonus.
It smelled great, and was delicious!

My new daylilies from Lowe's are blooming. I haven't even had a chance to plant them yet.
